Holm Oak's Pinot Gris was hand-picked and immediately pressed to tank to minimize skin contact. 20% was wild fermented in used oak barrels and 10% in tank, while the remaining grapes were fermented with aromatic yeast for enhanced aromatics. After two months of aging on lees for a richer mouthfeel, the wine was blended and bottled. On the nose, expect undeniable pear, citrus, and jasmine notes with a touch of spice complexity, followed by a burst of flavor and added weight from the wild fermentation. The finish is tied together with a crisp, natural acidity.
