Inniskillin Gold Vidal Ice Wine 2017
Inniskillin ice wine, recognised as one of the worlds great wines, is truly a winter's gift to wine lovers. Originally developed in a cool climate region of Europe, the climate of Canada's Niagara Peninsula an Okanagan Valley ideally suited to the production of ice wine. The grapes, having already reached their ripeness in October, are left untouched on the vines under a cloak of protective netting until the deep freeze of the Canadian winter. During this time, the grapes are naturally dehydrated by the elements, adding to the concentration of flavours aroma, sugars and acids in the juice.
