This elegant rosé from Northern Greece is made from Xinomavro, a distinctive and characterful grape that thrives in the microclimate of Epanomi in Macedonia. It’s crafted with a gentle approach: the free-run juice is fermented without skin contact in stainless steel, then rested on its lees to build subtle texture and depth. The result is a beautifully pale salmon-pink wine that feels fresh, expressive and seriously food-friendly.
In the glass, it shows lifted aromas of pink grapefruit, wild berries, cherry and strawberry, followed by a palate that’s both crisp and structured. There’s a savoury edge running through the fruit, finishing with bright acidity and a signature sour cherry lift. Best served well chilled, it’s a versatile rosé that works just as well with seafood pasta or shrimp saganaki as it does with Mediterranean-style sharing plates or spicy dishes.
