Dom Perignon...the most famous Champagne in the world...need more be said?
Dom Pérignon has a creative ambition that is a perpetual quest: the search for harmony that inspires emotion. All creative processes have their constraints. For Dom Pérignon, it is the vintage. An absolute commitment to bear witness to the harvest of a single year whatever challenges it brings, even going as far as not declaring a vintage.
Time is part of the Dom Pérignon equation. It takes no fewer than eight years of ageing to reach the aesthetic ideal of Dom Pérignon. In the darkness of the cellars, inside the bottles, each vintage experiences a slow transformation in contact with yeasts to obtain the harmony that will characterise Dom Pérignon forever. Everything is there, with great precision and impressive equilibrium.
Wonderful elegance and balance to this Dom Pérignon with cooked apple, lemon and hints of white pepper and salt. It’s medium-bodied with really fine bubbles and balance. Spicy at the end. So wonderfully fresh, linear and long. Racy and elegant. A DP that invites to drink right now. All about finesse. Tension, too, with precise phenolics and bright acidity on the back palate. Subtle energy. Drinkable now, but will develop beautifully in the bottle. Wine Critic on the 2012 Dom Perignon
