Domaine Bernard Defaix is a long-established estate in the Chablis region of Burgundy, France. The current generation (Didier & Sylvain Defaix) works organically with a lenaing toward biodynamics. Grown on one of the steepest, sun-drenched south-east facing slopes above Milly in the right bank of the Serein River, the wine is rooted in Kimmeridgian limestone rich with fossilised seashells resulting in a stricking minerality and crystalline clarity.
Certified organic since 2012, the Domaine puts rigorous care into low-yield wine-growing and gentle winemaking, combining purity of fruit with a tactile, elegant structure built to age gracefully.
