Straw yellow in hue, this Chardonnay reveals aromas of lemon tart and nectarine, complemented by subtle flint and cedar oak notes, with hints of wax and saline. It showcases a refined balance between pure fruit expression and textured winemaking, featuring grapefruit, stone fruits, and lemon curd. The palate delivers vibrant tension, supported by a creamy, chalky mouthfeel and crisp mineral acidity.
This Adelaide Hills Chardonnay were handpicked and whole bunch pressed with the free run component of the juice filled to French oak for spontaneous/wild fermentation. All barrels were tasted weekly, lees stirring being introduced to add complexity and encourage partial malo-lactic fermentation. Over nine months in oak, the majority of barrels remained unsulphured on lees however some were sulphured at various stages through maturation to
capture natural acidity and fruit brightness.
