"Caballito Cerrero" is a unique agave distillate, separate from tequila and mezcal. The Jimenez family stopped labeling their spirit as tequila to honor traditional agave distillation methods from the Amatitán region and resist the category’s industrialization. They use only mature agaves, including Blue Weber and Chato varieties, following a heritage spanning fifteen generations. Though a small operation, Caballito Cerrero is consistently recognized as one of Mexico’s finest distilleries. Its limited availability has earned it a devoted following among connoisseurs worldwide.

This expression features the uncommon yet traditional agave variety "Chato" (Angustifolia), native to the Guadalajara valley and historically used in spirit production before the mid-20th century tequila regulations. Chato is known for its more vegetal profile compared to Blue Weber. The aroma initially resembles an Añejo Tequila, with notes of honeycomb and caramel, evolving with exposure to reveal fresh green agave and subtle papaya hints. The spirit is light to medium-bodied, silky and elegant, with understated waxy and briny flavors that lead into a finish reminiscent of fruit bread.
