Clover Hill Vintage Brut Sparkling 2017
The 2017 Vintage Brut is crafted using méthode traditionnelle, with various parcels aged in French oak small-format barriques and large-format foudre to reflect the complexity that can be achieved with time and patience.
It has an attractive pale straw colour with a green hue. The wine is showing a fine bead and persistent mousse. The bouquet displays complex layers of lemon, ripe apples and honey, with toasty, nutty yeast characters derived from time on lees and the aged reserve wine. An elegant wine with superb length.
With four years on lees, it shows outstanding development and enough tension to repay cellaring for up to 10 years.
