Gonzalez Byass AB Amontillado Sherry
Viña AB is a youthful Amontillado that has undergone both flor and oxidative aging. Its exposure to oxygen has imparted a lovely light amber hue. The nose is understated and refined, with traditional Palomino scents of hazelnut and a subtle hint of yeast from its time under the flor. The 12 years spent in cask have added nuanced oak elements to the palate, which is refreshing and well-balanced. The finish is long and leaves a pleasant hint of saltiness and bitterness.
For maximum flavor, serve chilled between 8-12 ºC in a small white glass. Viña AB is a versatile and complex wine, perfect for pairing with even the most challenging dishes such as charcuterie, duck, consomé, hard cheese, and nuts.
The vineyards in Jerez are distinguished by their unique soil, majority Albariza, which is a white soil with up to 60% chalk and excellent moisture retention capabilities. This is crucial during the long, hot and dry summers, where irrigation is prohibited. The grapes for Viña AB are carefully hand-picked and, like all González Byass Sherries, exclusively grown in the designated Jerez Superior area renowned for its top-quality Albariza soils.
