All Giant Steps fruit is meticulously hand-harvested. The Chardonnay grapes undergo overnight chilling before being whole bunch pressed the next morning. The juice is promptly transferred into 500L French oak puncheons, with 15% new oak and 85% seasoned. Natural fermentation occurs over 10 days using indigenous yeasts, concluding with extensive stirring. Approximately 10% of the wine undergoes malolactic fermentation.

Aromas of honeycrisp apple, lemon zest, and green plum mingle with winter melon, starfruit, talc, pomice, and honeysuckle. Delicate white florals and nectarine notes complement a vibrant acidity and creamy kefir finish, accented by subtle saline and gently rounded oak nuances.
